Burrito bowls! 

✔️ You can prep most of these ingredients on the weekend for a quick weeknight meal when you’re busy. 

✔️ Bonus: Makes for an amazing lunch as well!

Roasted Cauliflower & Garlic Soup w/ @bothwellchee Roasted Cauliflower & Garlic Soup w/ @bothwellcheese smoked Gouda 

This recipe is super easy to prep ahead, then throw together for a low-maintenance dinner on a busy weeknight. 

(Prep ahead) Roast
-1 head cauliflower
-1 large onion
-2 heads garlic 
(Season w/ salt & pepper, roast at 425 for 25 minutes) (Refrigerate until you’re ready to make the soup, 2 days max.) 

When you’re ready to make the soup, add roasted veggies to 2 1/2 cups veggie broth in the slow cooker. Set to warm for the day while you’re at work. 

When you get home, puree and add 1/2 cup shredded smoked gouda. Thin with extra broth as needed. 

To serve, top with more gouda and a drizzle of harissa or Chimichurri. Croutons and bacon bits are a nice addition too! 

Goes great with fresh bread or a salad.

Breakfast bagels for two on this frosty #winnipegwinter morning, using some local ingredients. 

@hudsonbagelswpg all-dressed, topped with sausage, egg, @bothwell smoked gouda and pickled banana peppers! 

Not leaving the house and having ALL the coffee today. ☕️

 (But I’ll start my car from inside the house today to make sure it starts when I need it tomorrow, because #winnipeg.

Having a quick veggie side in your back pocket mak Having a quick veggie side in your back pocket makes weeknight dinner a breeze. 

I improvised these spicy green beans and they were ready in under 10 minutes. ⏰ 

The best part? No measuring! So you can make any quantity you need. 

I sautéed some fresh green beans in a bit of butter, dropped in a dollop of chili, garlic, ginger paste (a new to me product) and a swirl of soy sauce. 🧄 🌶 

I poured in a bit of water 💦  a put a lid on the pan to let them steam briefly, topped with some sesame seeds and they were done!

Here are some meal prep strategies you can use when making this recipe for your family on a busy weeknight.

◾️Slice, portion & freeze chicken when you bring it home from the store;
◾️Chop veggies on the weekend;
◾️Prepare marinade on the weekend;
◾️Deconstruct this meal and serve components family style to accommodate picky eaters and those with dietary restrictions;
◾️Use hands-free cooking methods like baking to free up your hands to other tasks while it’s cooking.

If you have a hard time deciding what to make for dinner, add breakfast to your weekly meal plan. 🍳 

In our house, this is the one meal that everyone loves and will eat without complaining. ✔️ 

You don’t have to stick to just bacon and eggs 🥓 🍳 (but that is of course a great option). Here are a few more:

◾️Breakfast burritos
◾️Omelettes
◾️Frittatas

◾️Cereal (you’re not a bad parent if you serve cereal for breakfast! This is a perfect option for a low-maintenance meal when you’ve had a long day!)
