Slow-cooker Minestrone Soup

This Minstrone can easily be made with ingredients you already have in your fridge and pantry. Minimal effort and maximum flavour.

Ingredients

  • 1 1/2 cups celery, sliced
  • 1 1/2 cups carrots, diced
  • 2 shallots, minced
  • 5 cloves garlic, minced
  • 1 14 oz. can chick peas, rinsed and drained
  • 1 14 oz. can canellini beans, rinsed and drained
  • 1 small zucchini, diced
  • 1 28 oz. can diced tomatoes with juice
  • 3-6 cups vegetable broth
  • pesto 1 Tbsp per bowl
  • cooked short pasta (ditali, shells) 1/2 cup per bowl
  • parmesan cheese to taste

Instructions

  1. Chop celery, carrots, zucchini, onion and garlic and add to slow-cooker.

  2. Rinse and drain chick beans and beans and add to slow-cooker.

  3. Add diced tomatoes with juice to slow-cooker.

  4. Top with broth and add enough to fill slow-cooker.

  5. Cook on high for 6 hours or low for 8 hours.

  6. Before serving, place 1/2 cup cooked pasta in a bowl, top with 1 Tbsp pesto and add soup.

  7. Top with parmesan cheese and serve with crusty French bread.
